Split Pea and Smoked Turkey Soup

Recipe from "Better Homes and Gardens"

Prep Time: 25 minutes
Slow Cooker Time: 10-12 hours (low) or 5-6 hours (high)

2 ½ cups Dry green split peas (1 pound)
2 cups chopped cooked smoked turkey or sliced cooked turkey sausage (8-10 ounces)
1 ½ cups coarsely chopped carrots
1 cup coarsely chopped yellow or green sweet pepper
½ cup chopped onion
2 cloves garlic, minced
1 tsp dried basil, crushed
1 tsp dried oregano, crushed
3 - 14-ounce cans chicken broth
Fresh herb sprigs, optional

1. Rinse split peas; drain. In a 3 ½ or 4-quart slow cooker combine the split peas, turkey, carrots, sweet pepper, onion, garlic, basil and oregano. Pour chicken broth over all.
2. Cover; Cook on low-heat setting for 10-12 hours or on high-heat setting for 5-6 hours. Stir before serving. If desired, garnish with herb sprigs. Makes 4 servings.
