Lemon Chicken with Black Pepper
*Juice of 1 lemon
2 1/2 tablespoons olive oil
4-5 cloves garlic, minced
**1 tablespoon black peppercorns, crushed
4-6 chicken breasts, skinless and boneless
Salt (optional)
Combine fresh lemon juice with olive oil and crushed peppercorns in a small mixing bowl. Mix thoroughly. Set aside for about 1- 2 hours. In a
shallow glass baking dish place chicken breasts, pierce with a fork and pour lemon juice mixture over chicken and let marinate for an hour in
refrigerator turning chicken often. Sprinkle chicken breasts with salt. Bake or grill 5 minutes or until chicken is cooked
thoroughly.
* If lemon has been in the refrigerator place in microwave for 15-25 seconds to maximize the juice in the fruit. (works good on limes & oranges
too!)
** I used a mixture of Tellicherry Black, Muntok White, Green and Pink Peppercorns.)
Serve with rice and a green tossed salad.
